ALMOND AND ORANGE CAKE

INGREDIENTS (22-24 cm cake mold):

  • 100g shelled Sicilian Terravecchia almonds
  • 3 fresh eggs
  • 180g sugar
  • 100ml orange juice
  • Grated zest of 1 organic orange
  • 80ml sunflower seed oil
  • 200g 00 flour
  • 1 tbsp baking powder
  • A pinch of salt

METHOD:

  1. In a large bowl, beat the eggs with the sugar until light and fluffy.
  2. Combine the orange juice, grated zest and seed oil, stirring gently.
  3. Add the sifted flour, ground Sicilian almonds and baking powder. Mix with a spatula until the mixture is smooth.
  4. Pour the mixture into a buttered and floured cake mold. Bake in a static oven preheated to 180°C (350°F) for about 35 to 40 minutes. Check the baking with a toothpick.
  5. Let the cake cool, then decorate with almonds and orange slices!
